Slow food gave strict rules to pecorino ‘s producers to be called a Real raw milk sheep cheese : first Of all The kind Of sheep must be Of one only kind ( massese as the name of Massa a tuscan town near The coast ) then the temperature Of The milk ( not to be boiled) so to preserve all the fresh milk properties as it is unpasteurized.
