Another family run business on The hills around Pistoia overlooking a river as fresh water is an important ingredient to make an excellent pasta!
Now you could see Inside The small factory That produce pasta since more Than 100 years & you could even meet The founder Of it , Giuseppe’s mother now more Than 90 years old and still a active in The family business Where she even lives , in The same building .
The production Of one Year here is less Than one single day ‘s production Of a big pasta industry….a long dry in Special wood big boxes as a sort Of rooms & using copper wire drawing machines gives not a smooth surface to The pasta as in The big industry does but a rough one so That The sauce can stay on it !
